Fried Crappie/Perch/Gills
Instead of Crappie you also can use Perch, or Bluegill fillets.
1 cup seasoned bread crumbs
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon, black pepper, or Cayenne pepper
6 eggs
1 1/2 pound Crappie fillets
1/2 cup Vegtable oil, divided
In a shallow bowl, combine the first five ingredients. In another bowl whisk the eggs. Dip the fillets in the eggs, then coat with crumb mixture. Dip again in eggs and crumb mixture.
In a large skillet over Med. high heat, cook fillets in batches in 2 Tablespoons oil for 2-3 min. on each side, (make sure the oil is HOT)until fish easily flakes with a fork adding oil as needed. Pass the tarter sauce, and of course Hot sauce!!
